Saur Verlag powstało w Monachium w 1949, wyniku przekształceń również pod nazwą Verlag Dokumentation Saur o.H.G (od ? do 1978) i Minerva Publikation Saur GmbH (1977) ; po 2000 w ramach wydawnictwa Gale Group Thomson Coroporation, po 2006 przejęte przez Walter de Gruyter gdzie funkcjonuje jako marka handlowa tego wydawnictwa. Miało odpowiedniki w Stanach Zjednoczonych, Francji i Wielkiej Brytanii (K. G. Saur Inc. in New York, in Paris die K. G. Saur Editeur S.A.R.L. in London K. G. Saur Publishing Ltd.
